Jamie's Joy Mounds

This candy is very much like the famous Almond Joy

3/4 cup sugar
3 egg whites
12 ounces flaked coconut
1/4 cup sliced blanched almonds (optional)
chocolate bark (melted)

Step 1

Heat the oven to 350 degrees F. Mix the sugar, egg whites and coconut together until well blended. If using almonds you can add these now.

Step 2

Drop by rounded teaspoonfuls onto 1 cookie sheet.

Step 3

Form it into a small mound. Bake until light golden brown, about 10 minutes. Let cool completely.

Step 4

Melt the chocolate bark for 1 minute in microwave. Stir and return for 30 seconds, and continue until melted.

Working 1 at a time, drop the coconut bars into the chocolate and roll them to coat. Place on the wzs paper and place in freezer for a few minutes to let the chocolate set until firm. Store in an airtight container for up to 1 week.

This is a great treat for kids.
