There is nothing better than cold fruit during a HOT summer day. We love to chill a large Watermelon and cut it open on the picnic table. For a easy fruit salad mix any or all of the following fruits: Watermelon & Cantalope - scoop into ball shapes for fun! ~ Peaches, Pears, Apples, Bananas, & Pineapple. ~ **
Squeeze the juice of 1 Orange over the fruit mixture and Toss.


3/4 cup strawberry jelly
2 tablespoons cassis or strawberry juice
1 1/2 pints (6 cups) Strawberries, hulled
1 prepared 9 inch graham cracker pie crust
1 cup whipped cream

1. In a small saucepan cook jelly with cassis over medium heat, stirring until jelly melts, about 1 minute.
2. Arrange strawberries pointed ends up close together in pie shell. Brush berries with glaze.
3. Refrigerate until glaze begins to set, at least 15 minutes or up to 4 hours. Cut into slices and serve topped with whipped cream.

I asked each member of our home to choose two scriptures about Love written by Paul in the New Testament. I typed the scriptures and rolled them up. Then we slid each scripture in to a love letter cookie. These small cookies are hollow inside. To make a delicious dessert I made pudding and topped each serving with two cookies. After dinner we opened our cookies and read the scriptures to each other. This was a fun way for our family to discuss Paul writing letters in the Bible.
